Is your cheese vegan?

Yes! Our dairy cheese is 100% animal-free.

How can your cheese contain dairy, but also be animal-free?

Thanks to the wonders of precision fermentation! Instead of needing a cow to produce the casein proteins that are vital to making cheese, we simply get some mighty microorganisms involved in a fermentation process. This lets us make those same casein proteins, without involving any animals.

How exactly — and why — do you make casein proteins?

Great question. With the power of precision fermentation! We give our microorganisms the instructions (genetic code in the form of DNA) to produce casein proteins, which are naturally found in cow’s milk. This is a food technology that’s been around since the 1990s, and is actually a method that’s already used in cheesemaking.

Casein proteins turn milk into curd, so they’re key in the cheesemaking process. By empowering our microorganisms to produce these proteins, we can make real dairy cheese without involving a single animal.

So what exactly is precision fermentation?

Precision fermentation is a type of fermentation where the microorganisms we’re growing (or brewing, as we call it) have been instructed to produce a very specific, well-defined ingredient. In our case, that ingredient is casein (take a look at the answers above for more info on casein itself!)

In a typical uninstructed fermentation process, microorganisms produce a whole range of ingredients and compounds as they break down the sugars around them, such as alcohols, acids, or flavors. But in precision fermentation, the microorganisms don’t split their efforts. Instead, they mainly produce the single compound that they’ve been instructed to make. So it’s super efficient and streamlined!

Does your cheese contain lactose?

There’s no lactose in our cheese, because it doesn’t come from animals. So if you’re lactose intolerant, we’ve got great news: you can eat as much of our animal-free dairy cheese as you like!

Does your cheese contain GMOs?

Our cheese is 100% free from genetically modified organisms (GMOs). While we do use genetic modification to empower our microorganisms to make casein proteins (check out the answers above for more details), these are all removed before we make our cheese.

Does your cheese melt and stretch just like the kind I know and love?

Yes and YES. We challenge you to tell the difference!
