Dairy cheese is unsustainable and plant-based cheeses don’t work. At New Culture, we are making cow cheese without the cow. We are making cheese that is sustainable, healthy, ethical and indistinguishable from current dairy cheese in taste, texture and function. Using fermentation to produce dairy proteins, food science to combine those proteins with plant-based fats and sugars and traditional cheesemaking methods to make any cheese of choice, we are bringing about a new culture for the cheese industry.

We are a San Francisco based, IndieBio startup that has recently completed our seed fundraising. We are now looking for an experienced and motivated Strain Engineer to join us in our mission of producing animal-free dairy cheese. By being one of our first employees, you will have significant say and responsibility in determining the success and outcomes of New Culture. The ideal candidate will thrive in a fast-moving collaborative environment and will look to develop a proprietary platform for host organism engineering and screening with the purpose of improving target protein productivity.

What will you be doing:

  • Optimize current protein expression system and identify optimal expression system for selected host organism

  • Apply state of the art genetic and genome engineering methods to create improved protein yield variants

  • Develop and apply selection and screening assays to identify best performing variants and growth conditions, leading to a high-throughput platform development

  • Develop and document new tools and methods

  • Collect, analyze and present data in company meetings

  • Cultivate knowledge bank of host organism and strain engineering literature

What we expect from you:

  • PhD in Synthetic Biology, Molecular Biology, Metabolic Engineering, or another relevant life science discipline (alternatively, 5+ years of industry experience)

  • Hands-on experience with media and culturing optimization, molecular biology techniques (PCR, cloning, sequencing etc), genome editing techniques (homologous recombination, CRISPR etc), directed evolution methodology (assays design for selection and screening) and basic protein analysis methods (protein quantification assays, SDS-PAGE, WB)

  • Strong understanding of physiology and metabolism of one or more host organisms

  • Ability to design, perform and troubleshoot experiments independently

  • Ability to deliver high-quality work under constraints of time and budget

  • Ability to work closely in a team of interdisciplinary and intercultural individuals
