Dairy cheese is unsustainable and plant-based cheeses don’t work. At New Culture, we are making cow cheese without the cow. We are making cheese that is sustainable, healthy, ethical and indistinguishable from current dairy cheese in taste, texture and function. Using fermentation to produce dairy proteins, food science to combine those proteins with plant-based fats and sugars and traditional cheesemaking methods to make any cheese of choice, we are bringing about a new culture for the cheese industry.

We are a San Francisco based, IndieBio startup that has recently completed our seed fundraising. We are now looking for an experienced and motivated Protein Biochemist to join us in our mission of producing animal-free dairy cheese. By being one of our first employees, you will have significant say and responsibility in determining the success and outcomes of New Culture. The ideal candidate will thrive in a fast-moving collaborative environment, will have a deep understanding of protein biochemistry/biophysics and will look to develop a platform for protein characterisation, micelle reconstitution and protein purification among other key protein work.

What will you be doing:

  • Develop and optimize the recovery strategies for tagged and untagged recombinant proteins in a bench scale expression system

  • Design and develop a streamlined downstream processing method for a large scale expression  system, working closely with our fermentation expert

  • Set up the lab / facilities in-house for protein analytics

  • Develop protein characterisation assays (identity, quantity, modification state, structural state)

  • Develop protocols for efficient protein micelle reconstitution from recombinant proteins

  • Optimize our cheesemaking process from recombinant proteins, working closely with our food scientist

What we expect from you:

  • PhD in Protein Biochemistry, Biophysics, or another relevant life science discipline (alternatively, 5+ years of industry experience)

  • Hands-on experience with HPLC, column chromatography, ultrafiltration, tangential flow filtration and other DSP methods for native and tagged proteins

  • Strong understanding of intrinsically disordered proteins and/or difficult to work with proteins

  • Ability to design, perform and troubleshoot experiments independently

  • Ability to deliver high-quality work under constraints of time and budget

  • Ability to work closely in a team of interdisciplinary and intercultural individuals

Even better if you had:

  • Industry experience

  • Dairy protein experience

  • Mass spectrometry experience
